Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked sausage, sliced into rounds
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 2 cans red beans (15 oz each), drained and rinsed
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup low-sodium chicken broth
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 bay leaves
  • salt, to taste
  • black pepper, to taste
  • hot cooked rice, for serving

Directions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add sliced sausage and cook, stirring occasionally, until browned, about 5 minutes. Transfer sausage to a plate.
  3. Add onion, bell pepper, and celery to the pot. Cook, stirring, until softened, about 5 minutes.
  4. Add garlic, smoked paprika, cumin, and oregano. Cook for 1 minute until fragrant.
  5. Stir in diced tomatoes with their juices, chicken broth, red beans, bay leaves, and browned sausage. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes to blend flavors.
  7. Uncover and simmer 5 minutes more, mashing some beans against the pot with a spoon to thicken.
  8. Remove bay leaves. Season with salt and pepper to taste.
  9. Serve over hot cooked rice.
