Southern Peach Cobbler

Ingredients

  • nonstick cooking spray, for greasing
  • 3 cups peaches, sliced, peeled and pitted (about 4-5 medium)
  • 1/2 cup granulated sugar, for filling
  • 1 tbsp lemon juice, fresh
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar, for topping
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk, whole or 2%
  • 1/4 cup unsalted butter, melted

Directions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with nonstick cooking spray or butter.
  2. In a medium bowl, combine the sliced peaches, 1/2 cup sugar, lemon juice, cornstarch, and cinnamon. Stir to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Add the milk and melted butter, and stir until just combined (do not overmix). The batter will be thick but pourable.
  4. Spoon the batter over the peaches, spreading it evenly to cover as much as possible. It's okay if some peaches peek through.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly around the edges. A toothpick inserted into the topping should come out clean.
  6. Let cool for at least 10 minutes before serving. Serve warm.

  • If using frozen peaches, thaw and drain them well to avoid excess liquid.
  • Adjust the sugar based on the sweetness of your peaches—add more if they are tart.
  • The topping will puff up and spread; that's normal. Don't worry if it doesn't cover every spot perfectly.
  • If the topping browns too quickly, loosely cover the dish with foil for the last 10 minutes of baking.
  • Serve with vanilla ice cream or whipped cream for a classic finish.
